It’s national taco day, so what a great time to share this amazing Black Bean Salad from Top Secret Catering. You can use this as a taco or nacho topping, as a side dish or even as an easy lunch.

1 can black beans drained and rinsed

1 small garlic clove, crushed
1 tablespoon grated onion
1 cup chopped cilantro
1/2 cup lime juice
salt and pepper to taste
Mix all ingredients and refrigerate for at least an hour.

For grating an onion: cut onion in half and use a spoon to gently press the inside in long strokes, scooping out liquid and mushy flesh.
