INGREDIENTS:
1 can white beans: great northern or canellini beans
1 clove garlic, crushed
Juice from 2 lemons
1/2 cup chopped parsley, flat or curly
1 teaspoon salt
1 teaspoon pepper

INSTRUCTIONS:
Mix everything and chill for an hour. Don’t be afraid of the lemon juice – it adds amazing flavor. Also, always make sure to check the ingredients on the beans to ensure they’re free of the allergens you’re trying to avoid. I find that my luck is better with cans labeled organic.

You can eat it alone as a side dish salad, or with pita chips, tortilla chips, pita bread or your favorite other dippers.
